I’ve been in my kitchen baking all day. I had this brilliant idea to make green cupcakes. I put food coloring in the cake mix. So if these look off, it’s because they are a pastel/mint green color.
Then I decided I should frost them green so I put food coloring in the icing.

Then I had another idea to create my own shamrock stencil and use green sugar to put shamrocks on them. So now I have two dozen greener than green cupcakes with no one to really eat them. That’ll change when the kids come.
You might be wondering what this is down here… well, I didn’t realize for high altitudes that the cake mix only uses egg whites. Soooo… I had a lime recipe that uses only egg yolks. What this is basically, is a square key lime pie with pistachios in the crust. I got it from Martha Stewart’s Everyday Foods Magazine. It has to cool before I can chill it so it will set. I hope it’s yummy. It was pretty easy to make. After it’s chilled I’m supposed to be able to use the paper hanging over to lift it out and cut it into squares.
